What thatch roofing is

Thatch is a roof covering made from bundled plant stems, most often water reed, combed wheat reed or long straw, laid in overlapping courses from eaves to ridge and secured to the roof timbers with traditional fixings such as hazel spars and sways. The material is agricultural: its supply is seasonal, its quality varies with the harvest, and different materials behave differently on the roof.

It works unlike anything else in this category. Water is not carried over a sealed surface; it runs down the exposed ends of densely packed stems and drains clear before it reaches the base of the coat, so the depth of the coat and the angle at which the stems lie do the work. There is no conventional underlay beneath it, although barriers are sometimes introduced beneath a coat for other reasons.
